Welcome to The Gem and Keystone Brewpub™.
We are proud to offer a twist on the classic
brewpub; serving handcrafted ales and lagers brewed
on premises, providing “food lovers dining”
which emphasizes a seasonal menu using local and
sustainable ingredients and consistently delivering
exceptional service. What more can you ask for?
The first principal ingredient of our BrewPub
is handcrafted beer from our own ShawneeCraft
Brewery. Committed to the vision “True to
Nature, True to the Craft,” the love and
care that goes into making each barrel of ShawneeCraft
is what makes this beer so special. Ingredients
are chosen for their organic make-up so they do
not interfere with the taste of the beer, and
are also chosen for their unique interaction which
creates tastes and aromas that are second to none
in the beer world. The small batches and individual
attention allotted to each blend is why we also
refer to these ales and lagers as heirloom or
artisanal beers.
An integral part of our identity is our distinctive
menu and attitude about food. We refer to our
approach as “Food Lovers Dining” emphasizing
a seasonal menu using local and sustainable ingredients.
Interesting blackboard specials, pub favorites
and the creative use of local ingredients (from
our garden, the farmer’s market and other
sources) is something for guests to talk about
and keep coming back to experience.
Your BrewPub experience is not complete without
the delivery of exceptional service. Training
our staff and setting the expectation of creating
a fun, educational, service-oriented atmosphere
for our guests is paramount.
We know you are wondering, what’s with
the name? In keeping with English pub style tradition,
the combination of two seemingly unconnected words
to create the moniker for an establishment did
not fall short when naming the BrewPub here. The
Gem portion of the name was chosen for its historic
reference to our golf course being called “The
Gem of the East.” Though we are in the Keystone
state, the Keystone portion was chosen for its
significance in the world of brewing. The keystone
is the wooden or plastic fitting the tap is put
through in an ale cask.
